Ingredients for 2 servings:

  • 1 avocado
  • 1/2 cup couscous
  • 1/4 red onion, diced
  • 1 teaspoon of moringa powder
  • Lemon juice
  • Olive oil
  • 2 handfuls of mixed salad

Cut the avocado into quarters, remove the pit and skin. Roast it in the oven for 15 minutes at 200 degrees, sprinkling it with oil, salt and pepper. Prepare the couscous and season it cold with the onion and oil. Then add the salad and sliced ​​avocado.

Separately, mix a generous spoonful of lemon juice with a generous spoonful of olive oil and a teaspoon of moringa powder. Use it for seasoning and serve chilled.
